Bavette’s at Park MGM: Come for the Steak, Stay for the Sandwich

Bavette’s may be best known as an upscale steakhouse, but hidden among the usual cuts and classics is what might just be the best sandwich in all of Las Vegas. Located inside Park MGM—and with an original location in Chicago—Bavette’s has built a reputation for its moody, vintage vibe and high-quality steaks. I’ve enjoyed their steaks on multiple visits, and while they’re solid, nothing could have prepared me for the unforgettable experience we had during our last trip in April 2025.
This time around, we visited Bavette’s with a very specific mission: skip the steak. I had heard from several trusted sources that the real gems on the menu weren’t the steaks at all. With a 7:30 PM reservation, we were seated just shy of 8:00 PM—Vegas timing, no big deal. And by that point, we already knew exactly what we were ordering. No menus needed.
The server came by to take our order, and without hesitation, I recited it from memory. She laughed, asking if we’d been studying the menu online. (We had.) We began the meal with a half loaf of Bavette’s house-baked sourdough and a half wedge salad—hold the gorgonzola.


The bread was warm, crusty, and excellent—easily some of the best sourdough I’ve had in Vegas. The salad was equally impressive: crisp lettuce, thick-cut bacon, and a perfectly balanced dressing that made every bite memorable. Even without the cheese, it held its own as one of the best wedge salads I’ve tasted anywhere.
For my main, I went with the cheeseburger with thick-cut bacon, but unfortunately, this was the one misstep of the evening. The bacon was nearly an inch and a half thick—and while that might sound indulgent, it completely overpowered the burger. I eventually removed the bacon halfway through and enjoyed the rest of the burger as it was originally intended. It’s still a good burger, but my advice? Skip the thick-cut bacon.


Now, let’s talk about the true highlight of the night: the French Dip.
This sandwich was everything—and then some. Tender, flavorful prime beef, a horseradish sauce that hit all the right notes (creamy, sharp, and just the right amount of heat), and an au jus so rich and savory, I would have gladly sipped it on its own. And then there was the bread—crusty on the outside, soft and pillowy on the inside. It reminded us of the kind of bread you’d find on a perfect po’ boy in New Orleans, and it held everything together beautifully without getting soggy. Heidi ordered it, but let’s be honest—I couldn’t stop stealing bites. It’s been two weeks since that dinner, and I still think about that sandwich every single day. It was easily one of the best things I’ve ever eaten in Las Vegas, or anywhere else for that matter.

So, while Bavette’s is marketed as a steakhouse, don’t sleep on the sandwich section. The French Dip is nothing short of spectacular—and worth a visit to Park MGM all on its own.
